Maybe, according to your source, if they just listed the ingredients. I tend to get legal information from Canadian sources, not American, so I'm not yet convinced.
As for the supposed author, I was assuming for sake of argument that the stated name was indeed the actual author. I don't see any point in challenging that for sake of this discussion.

I'm no expert but my opinion on what "substantial literary expression in the form of an explanation or directions" means its not necessarily the methods and techniques that are copyrightable, it's your wording or phrasing. So if you've written a recipe book and someone copies it word for word including all of your artistic flair and anecdotes, etc, that would be infringement. If someone just takes your recipes and rewords the instructions etc. than its probably not.

Yes, Tim, for a non-expert you've given a reasonable interpretation of I.P. law. (I'm not an expert either but I did work in an I.P. office for a few years so I do know a thing or two about the matter). Had Mr. Swedburg used the same hand drawn hops and crossed out the same words as in the ad the Keith's folks would be in real trouble.
