I'd love to know more about the brewery. 550 sq ft does not seem like a lot of space and I'd like to see how you manage it, batch sizes, etc.

I think Nano is a flexible size. I imagine something like Sober Island.

Hey Fellas,

Not quite as small as what Sober Island was starting with, but close. (Jonathan has told me some horror stories about triple brew days for 30gal total)
Our main pilot batch system is the 98.5L synergy system. The exact same system used by our pals over at 2crows brewing.
We're planning 4 X double brew days/week.

As we're definitely on a tight budget, we're starting with plastic conicals.
We've got 16 of them on the way which should allow for a fair bit of wiggle room
(yes we are aware of the potential headaches but we're doing it anyway)

Aside from that a lot of our gear is very much the same as your average startup. Duct Tape and chewing gum, lipstick on a pig...
but we're doing it and we're pumped.

I think I missed the india saison, but I got the flight at Good Robot last week, that had some good beers. Spruce beer's not quite my thing, but I liked the glacier a lot, and the copper.

India Saison was a Stilly special (Spruce was GR's special). The boys have promised the brew the India Saison again.

Our batches are small but so is our overhead. Smallest brew house in town also means the least debt/bills. We're tucked away in the back corner of an old building, What we lack in visibility is well made up for by super cheap rent, Zero payroll (for now) and very minimal personal debt. Our gross margin is best on growler sales, and that is our primary focus going into the spring. Just a matter of getting the word out to all the condo-dwellers downtown.

When things (hopefully) ramp up in the spring, 4Xdouble brew days/week land us just shy of 8hl/week. That's our full capacity. We clearly won't be rollin' in dough, but once the small debts are paid, we might actually be able to pay ourselves something modest to live on.

Save what we can, keep things interesting, proof of concept, sales history, etc...
Then expand elsewhere to a second location, keeping the downtown as a satellite spot for growler fills, etc.
