Lol we are stoked. Will be ages before we have beer ready, but I hope you'll all stop by when we get closer. Wine barrels, the occasional spirit barrel, French puncheons & foeders, with 100% bottle conditioning are the name of the game; should be brewing by mid-March. :cheers:

This is awesome...I'm picturing having our own "Dunham" right here in Halifax. Congrats folks, looking forward to it
I am trying to source some Chardonnay barrels for a project with a local NS brewery...any leads on where to find?

If you don't have an in with a winery (and the time to wait for them to discard barrels..) the best option is a barrel broker. Lots of them in the US, and a couple in Niagara. We got some barrels from a fella named Damien @ DRM ReCoop; he was great to deal with and the barrels arrived smellin' sweet!

Ha ha, OK Jayme comin' right up!

Might take you up on that Liam, thanks. Have had some really interesting beers made with koji, in a sake-like process. Salted plums and fungus!

That's a bummer Mitch.. will continue to follow your posts on MTF!

One thing we're gonna do that I haven't seen yet with a brewery is to offer a webshop for our beers, and we'll ship nationally thru Canada Post (or possibly a more temp-controlled shipping company). The legalities are a bit grey (the federal government gave their thumbs up to this all the way back in 2014), but I contend that if all the wineries are doing it, so can we. Wouldn't do it we were making fresh beer like pale ale etc, but a bottle conditioned saison can travel!

As both a consumer and soon to be brewer in BC I'll be keeping a close eye on this part.

Hopefully you have the doors open by the time I make it back to Halifax for a visit (this October my brother is getting married so I'll be around then)

NATTO beer...beer that smells like shit...and possibly tastes like shit!
