Hello from a very novice (new) brewer. I have a question that I`ve tried to research but came up empty.
Recently I`ve made a Blue Moon clone (fantastic beer, my new favorite beer) which tasted great, However, as I get near the end of the keg I`m finding that the beer is loosing it`s flavor and picking up a bit of a bitter taste or leaving an aftertaste. I recently had a red that seem to do the same thing as the keg neared being empty. Any idea why this is happening? Is there something that I should be doing that would help with the taste as the keg empties?

How quickly are you drinking it? It could just be changes due to aging.

probably about 3 weeks to a month

I was initially thinking that your beer had a bit more yeast in suspension and that was giving it a more rounded out flavor. I’ve experienced my hefs and other wheat beers do that.

Alright, so is there something I can do about it?

Is the aftertaste kind of metallic? It could be carbonic acid bite from getting more CO2 into the beer as the headspace increases. You could try dialing down your CO2 a bit as your keg empties. If you are using a keezer with no air flow inside, it could also be getting colder as it empties which would suppress flavor and make it take up more CO2 giving the aftertaste.

A quick test would be to tap out a glass, let it warm up a bit it stir it a little to drive off some of the gas. See if that changes things.

I was thinking CO2 aswell. I have had that problem before when I over carbonated. Try turning you gas down/off as you empty the keg so you don’t force more CO2 in
