Fenugreek seed

Post by kenny10 » Mon Sep 09, 2013 4:19 pm

I am making a maple ale using a brown ale as the style. The IBU will be mid twenties and will use grade b maple syrup (375ml) either in the secondary or at bottling. I want to know how much Fenugreek seed to use and when to use it. I am thinking 250 g may be a start. I love the sugar moon maple ale by garrison and looking for the maple flavor that is represented in that beer. Any thoughts.

whoa

That's way too much. Try 5 grams finely ground into the secondary.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

I used ~ 10 g cracked fenugreek seeds per 23 L, added for the last 20 minutes of the boil. Back when I used to make it for a certain brewery :cheers2:

Hey Mr. Nash...Ive acquired fresh organic ground fenugreek...im using 1/2 kg grade b maple at flameout and thought id hit the brew with 5-10 grams of ground fenugreek as well. Would you recommend this?
At Bat: several Czech Pils
On Deck: Cream Ale
In the Hole: Kolsch
Clean Up: Tall Ships Ale clones
On tap: Propeller Pils, Festa Cream Ale

Absolutely, there generally won't be much if any maple flavour make it through to the finished product after fermentation of syrups on their own. Maple sugar "might" yield better results than syrups.

I haven't tried this but I'd think caramelized maple sugar might produce some good results. Just saying.
