Not as pretty as Nash’s picture but man these cans are awesome!!!! I love how this beer has evolved. You could smell orange from three feet away. Even my IPA hating wife said it is great.

Looks damn sexy to me! And thanks for commenting on the evolution of it.Celiacbrew wrote:Not as pretty as Nash’s picture but man these cans are awesome!!!! I love how this beer has evolved. You could smell orange from three feet away. Even my IPA hating wife said it is great.
Exile has been the battle of my career, I call it the great battle against the enzyme. Took me a couple years but I finally fucking won, haha! All this so a few gluten-sensitive friends would have access to good beer. I thought about discontinuing the beer altogether, more than a few times.
I've had to approach this beer from an entirely different angle to get it to a state I'm happy with. It's really difficult to get the right balance with such a highly hopped beer combined with Clarity Ferm. It has a tendancy to dry the beer out in an odd way, as if the water is super high in magnesium (which it isn't) leaving it finishing with an odd sort of astringency. Over the 2 year span of tweaking and experimenting, we finally honed it in to a very solid combination of hop varieties, hopping-rate and technique, water treatment, malts, mash ph and regime, yeast strain and fermentation temperature.
Pretty happy with it over the past ~ 4 - 6 months, it's now our fastest seller by quite a lot. Batches sell out fast, in less than 10 days so we always try to keep at least 2 batches of it on the go at all times but occasionally still sell out of it. There's no concern of it not being fresh I can tell you that!
Am I 100% happy with it now? No, but damn close! The war is mostly over with and won, but minute battles ensue...

What's the can inventory looking like? Was hoping to pick up a few cans on Monday or Tuesday when I am in town.

I'll sell you some no problem, just bring cash (!) since I don't operate the POS and the pub doesn't open until 4 on Mondays.GCR wrote:What's the can inventory looking like? Was hoping to pick up a few cans on Monday or Tuesday when I am in town.
We'll be in and out of the brewery after 10 a.m. So just let me know if you want to stop by.
Otherwise, we sell the canned product in the retail shop, which is open Fridays and Saturdays only.
As for stock, there's 1 can of Exile left! More substantial amounts of Zion, DOA and Flat Black Jesus left in the fridge, but all backup stock is gone.
Bishop's Cellar might still have some stock, not sure.

Re: Official Unfiltered Brewing Info Thread
Always great to hear, thanks!
This batch of Simcoe hops are quite a lot more aromatic, with the in-your-face pungency that we all know and love. So it's really fucking dank and great
See you again soon, cheers

Does this mean we will start seeing you in NSLC? Or are they only available from the store?

Yes! Thanks Sandy.
We've got DOA DIPA, Hoppy Fingers APA, Flat Black Jesus stout and Exile On North St IPA loaded and flying out the door!
Also bottle release on Commissar RIS today, and on tap in the pub for 11 oz glasses only, no growler fills.
