The refermentation in the bottle could potentially clear things up/mellow things out.

Same thing happened with a wheat beer I made last year. The stuff that conditioned in the bottle was very different (and better) than what was in the keg. That caused me to start tossing a bit of sugar into the keg, just to see what would happen. For me, if seems to eliminate the 'greenness' and makes for a nicer beer.
