I've been lurking around here since I started brewing a few months ago, so I thought I'd finally become a member. I've lived here in downtown Halifax for four years now (from BC) and am impressed by the home brew culture here!
So far I've done four Festa brew kits which are surprisingly fantastic tasting! I've done a Bock, Pale Ale, Brown Ale and a Wheat Beer is in the secondary now. I tried a different yeast for the Wheat so I'm curious to see how it turns out. Anyone else playing around with modifying the Festa kits?
I'm going to keep playing around with the Festa kits for now and eventually transition into all-grain.
See you around.
Bruce.

Lots of guys here mod the Festas, I'm sure they will chime in.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Been modding festas for the last six months with some success. It can be tough!
