New Brewnoser member from the 'Nish
Hi all;
Another new brewer here, from Antigonish;
I have been at it for a year now, doing mostly the grain + extract + hops kits from Noble Grape. Almost all of these have been great, and have a done a few of the Coopers can ones – the IPA was good, another English Bitter was terrible, so I am sticking to the Noble Grape kits. Have started some hop plants in my yard - got about 3 foot high this summer, so should be much better (higher) this summer, and harvested some wild hops as well – they were great! Am thinking of doing a spruce beer this spring where spruce tips become available. I have a recipe, but just wondering if others out there are going that route – a grain + extract + hops + spruce tip brew? Some pointers on that would be great!

Re: New Bewnoser member from the 'Nish

I think there might be a few threads on here about making spruce beer.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

New Glasgow here, so not too far away

This is my signature. There are many like it, but this one is mine.

Thank you Mr. X. - yes - I did a forum search and found some interesting spruce beer recipes. The one I have is from the book by George Hummel. No shortage of spruce around here!

I have a recipe I can give you later if you want. I got Gold for it in Toronto a couple of years ago, and I brewed it again last year and got silver in Montreal.
BTW, welcome

I am drinking ale today." ~ Poe

Another Antigonisher here. Live in the city now though. Not a great craft beer culture in Antigonish when I lived there but that seems to be changing everywhere.

Re: New Brewnoser member from the 'Nish

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Welcome!
I've made spruce beer several times using partial mash techniques and it is always very interesting. Don't hesitate to ask any questions.
Cheers!
