Hello all. I joined months ago, but ran into some technical problems that prevented me from accessing. I have been brewing on and off for many years (from store beer too expensive and not so great, to drinking too much great money saving homebrew to, again, store beer too expensive to finally coming home). I have used brew-it-yourself shops in Ontario as well as kits for home, but wanting to go all grain I bought a Robobrew in the past year; I and am slowly learning how much I have to learn about many things...there remain some unknown unknowns. I am keen to build my own recipes so I started with a number of SMaSH dishes and have since done some home roasting and simple creations.
I will say this, even the disappointments are better that most major brands.

Glad you're enjoying learning about all grain. It's great to be able to control every ingredient.
If you have questions about those unknown unknowns you don't know how to search for on the internet I'm sure if you put it in paragraph form here someone will help you out.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.
