Back 2 Brewing

Hey Folks,
Getting back into brewing after a lengthy hiatus. Spend a lot of time brewing and kegging in years past, but there was never the time or space for me to do it until now.
Keeping my setup small and aiming for 1 to 2.5 gallon brews for now. Have never done all grain but I’m just gonna dive in with BIAB. Warming my new 3-gal Fermonster up with a cider right now than on to a Hefe and a Black IPA.

Welcome aboard!
BIAB is great to get started with grains and mash temps.
You may want to consider holding out the dark roast grains for the Black IPA until the last 10 minutes or so, (basically just a short steep) so as to not over extract roast bitterness.

Should I be worried much about mash temp drops at that point? My plan is to wrap my kettle in sleeping bags and not adjust the temp at all. Here’s the recipe:
Recipe Profile
Method: 1 gallon BIAB (Brew-in-a-bag), single stage
Target OG (Original Gravity): 1.065
Target FG (Final Gravity): 1.017
Bitterness (IBUs): 59
Estimated ABV: 6.3%
Boil: 60 minutes
Ingredients
2.25 lbs Pale Malt (2-Row)
4 oz Munich Malt (10L)
2.5 oz Carafa III
2.5 oz Caramunich Malt
0.25 oz Columbus hops at 55 minutes
0.25 oz Columbus hops at the end of the boil
0.5 oz Centennial hops at the end of the boil
Safale American Yeast (Fermentis #05)
0.40 oz Chinook, dry hop for 5 days
0.50 oz Centennial, dry hop for 5 days

Nah, the majority of malt conversion happens in the first 15-20 mins. Perhaps let it go the the full 60 mins and add the cara malts for an extra 10-15 minute steep before you pull the mash.
Actually, I wouldn't even be concerned with those malts adding any astringency, just some caramel sweetness. Just add them all in to the mash at once. The separate steep would be more suggested if the dark coloring was coming from a dark malt like black patent where the added bitterness can over bitter an otherwise balanced IPA.
Hops look great, centennial & chinook are a nice combo!

Thanks for the input! All grain is a whole different animal. I probably should start with some sorta SMaSH for simplicity’s sake but nah... fug it.
