By the time I shipped it to her from here, it would cost me a fortune, and she would probbly already have recieved it from her supplier anyway.

Shane, I am going to do my first on Sunday. I will just be about finished holidays then and will be home.
I did find time to make a cheese press to make it a little easier to form the cheese. I plan on a gouda for my first
as it is the cheese I'm most fond of anyway.

Well my first cheese is in the press... had quite a time keeping from over shooting my initial temperature, but managed to do it.
Rehydrated the renet too early but time cured that.
Going to get back on the saddle again tomorrow and do another.
I think trying to do too much at one time made me drop the ball.
I did 21 jars of Raspberry jam from berries I picked last week while around the bay and also made up fresh bread.
Wife better be good to me tonight....

At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

Second cheese is in the brine now and the process went much smoother.. no hitches at all

Smoked all my cheese last night... cough cough.. starting to get cheese lung... and then waxed three pieces. One I started eating.
Bit salty and dry. Thinking now I may have over done the pressing and brine time.. something I'll correct on my next batch.
Over all, I'm pleased with what I made for my first try.

Yeah, I love making cheese also. Of course the only thing better than making cheese is making beer and eating cheese, especially your own.
Thanks for pushing me into it....... at least that's the excuse I use when my wife shakes her head at me...

Hey Tony, how much did it set you back ordering your starter kit? I'm probably going to get motivated to take a kick at the cat during the shitty winter months but don't want to get too out of hand with the costing.

That's the one I went with also, but you don't really need all that the kit contains.
You do need culture and rennet and you probably have an accurate thermometer. Cheese cloth is cheap and you could make a press yourself.
The mold can also be made cheap.
Now that I have these things, I only need to re-stock my culture, rennet and cheese cloth from time to time.
Fun to make and also good eating.

Wax was cheap, and it is reusable.
