I've been meaning to start making cheese for a while. Think there's enough interest to start a group buy?

Tony, what about the milk? I think I read one time you need to use raw unpasteurized milk to make cheese, or add some sort of chemical to pasteurized milk. What do you know about that?

You can use pasteurized milk just fine. I use 2% homogenized milk and add a pint of heavy cream to it. You'll also need to use calcium chloride to firm up the curds.

Maybe it's just the CaCl which is different then.

OK, hard trying to keep up with consumption, but my Gouda making is starting to level off where I can almost keep ahead
of my eating it.
Made another batch last night and smoking it now before drying it for waxing and hopefully aging it for a few months.
Made two baby Goudas and a slightly larger piece I never had the proper molds for. 73f for a cold smoke.
Sorry for the crappy picture.... :(

My wife and I recently made a homemade goat haloomi which was great, taste was bang on, but the texture once fried was slightly off :(

I would love to get my hands on fresh Goat milk.
When I was growing up goats roamed freely around the harbour.

Goats milk Gouda... yum.

I almost ordered from those guys a while back. Their prices are better than everywhere else I have found.

I'm going to try them next week. Their website is not fully functional so you still have to fill out an order form. A bit more of a pain then a shopping cart but fairly minor.

Guys, let me know what you want. My plan was to call them and order over the phone on Monday. They say that they send out shipments by CanPost every other day, so there is a slim chance it might even arrive by Hoptoberfest.

I was thinking of a mozzarella starter (although you can just use citric acid) and a hard cheese starter to begin. Throw in some rennet, a mould and some wax which should get me going for a little while.

^ Yeah, Glengarry is significantly more expensive. I checked them out before I got into cheese making and due to their prices I haven't purchased a thing from them. All of my supplies have come from cheesemaking.com.

My orders typically take 3-5 business days to arrive. I should of mentioned earlier that I haven't looked on glengarry's website in some time so things might of changed. But when I first got into cheesemaking, glengarry was much more expensive than cheesemaking.com. I've just stuck with cheesemaking.com ever since.
