I've got these pork back ribs currently in the smoker right now. I did a mustard slather and rubbed them with a homemade Cajun rub. I'm gonna brush some Sweet Baby Ray's sauce on them during the last 15 mins or so.

After Mama bear popped out a new cub this week, I decided to celebrate while playing Mr.Mom at home with the other kids. I picked up a nice little steak to cook on the Kamado just for myself.

Just thought I would chime in with some of the Canada day weekend eats. All PEI - salt and pepper beef ribs, charmoula haddock http://www.latimes.com/features/la-fo-s ... 2238.story, and oysters with a generous dollop of herb butter.

For some reason this is the only shot I have of it, but it was good. Next time I am going to unroll it and cut some of the fat off, that sucker was greasy but awesome with a chipotle rub and my beet stout BBQ sauce.

Ground up about 10 lbs of beef yesterday, what a ton of flavour and texture when you grind the right cut of meat yourself.

Cambozola burger tonight, with caramelized onion, garlic, fig, roasted pepper and mint, it was wicked :drool:

Burger of the day - Old Skool, hot peppers and cheddar. Gotta get the money shot of that yolk next time, it coated everything including the burger, my hands, face and plate on the first bite :lol:

Burger looks awesome! I hadn't tried a fried egg on a burger until a couple months ago - the burger came with both fried egg and peanut butter and was one of the best "bar/restaurant" burgers I have had. Egg with cheddar and jalapeno sounds like an excellent combo!

It was you recipe in the pizza dough thread that got me on this. I find it doesn't rise much like 'regular' dough. Just takes some getting used to. Trying to get the final texture and crispness right.

It is definitely a different type of flour. It is fantastic once you get used to it. Did some fricot with GT dumplings tonight.

FWIW, yesterday I picked up some lamb loin chops at SS on Young St. for $8.80/kg. They were off the hook delicious and a wicked deal, considering Pete's sells them for $48.50/kg.... :think: :-D
