So I have a few peppers ready to go as well. Cayenne, Fresno, Big Jim, and Numex Surprise. I'd like to 'stretch' their use as I don't have a ton. Dry them? Freeze them?

You can dry or freeze them no problem. The thing about frozen peppers is they are somewhat mushy when you thaw them which is fine if you're going to use them for a sauce or chilli. If you dry and then grind them up for powder you can season all kinds of things like salsa, chilli, popcorn, etc, etc, but doesn't make the best hot sauce. You can also freeze them and dry them on a dehydrator later.

I have both frozen peppers and powders on hand. Powders are super convenient.

I am freezing most of mine as I harvest them. My plan is to can 125ml jars of pure of specific types and use them in hot sauces. I'll probably powder most of my aji limon, lemon drop, numex sunrise, and aji chinchi amarillo. I am going to make some poppers from red and green fresno, as well as big bomb hybrid (hoptoberfest snacks). The remaining lot of my cayennes, fresno, and big bomb will lacto fermented for hot sauce.

Need a dehydrator for drying? I assume you dry the whole thing and grind up with the seeds as well?

I guess I'll freeze for now and figure out if I'll make sauce or powder later.

It certainly helps. In warmer climates you can air dry them no problem, but it's not so easy here. Pop in the second hand store sometime, you might find one for cheap.

I just remove the stems but otherwise use the rest of the pepper, seeds and all. I find it's really not worth removing them. You may want to cut the larger peppers in half to help with dehydration.

I have a few of the yellow ones pictured in this picture (lower right) Are these the 7-pot ones? if so should I be pretty careful with using it in 1 pot of chilli?

Those are Fatali and are considered a superhot. They are close to the heat of a 7 pot or scorpion. Even 7 pots are really not spicy enough to make 7 pots of chilli really hot though so go ahead and experiment.

Please be careful, even when handling just the outside of the peppers. I was just picking some... washed my hand then rubbed my eye... and you can guess the rest... I wore a frozen facecloth on my face for most of the evening. EZ said it was the cutest she's seen me. :(

Sorry to hear that, Chris. I had a similar experience (minus the cloth) the other night after washing a bunch of them. So yes, handle your weapons grade peppers carefully.

Yes! Gloves all the way - sometimes I'll even double up. I had a terrible experience a few years ago. First my eye, then nose, then I used the washroom... And if you wear contacts, take them out before you start!

My mother grew some hot peppers one year not knowing just how hot they were. She had the same sort of fingers and eyes experience with them. Hot peppers are now banned from her house.

I just made a couple bottles of Naga Morich sauce. This has gotta be the hottest sauce I've made. I only had a taste and I think I'm hallucinating. I'm bringing some for show-and-tell. Be careful. ;-)

Hang in there, chances are they will ripen. I find that species take forever and I also have a bunch more.
