Knife hone steel?

Depends on the knives your using a bit, hard steel or soft steel. German made fine hone, great for keeping a hard steel blade sharp, but won't help a dull blade at all. Best multipurpose steel woulb be a dinmond grit steel ,it will work on both types of steel with little pressure to hone and will slighty sharpen a dull blade.
I have Global knives from Japan and i use a ceramic steel, super hard to keep the very fine egde on my knives sharp.

I have mainly Grohmann knives with a couple of Henkels

I use a pro set of Paderno knives and they feel completely different since I got the ceramic steel (in a good way).

Grohman will do them for free!
You can't beat a good steel for edge maintenance.
