Ever made malt vinegar on purpose?

Hey all,

Has anyone here ever made malt vinegar on purpose and not because of an infected batch of beer? I'm thinking of ordering a real starter culture and giving it a try.

I haven't, but I've heard you can use unfiltered, unpasteurized vinegar instead of getting a culture. Might be a cheaper way to go. Something like this:

Thanks, I've read about using that vinegar as a starter. I was going to ask if anyone has seen this locally but "free shipping in Canada" right on.

BTW I found the Bragg vinegar at Pete's Frootique in Bedford. They had some others as well.

Could you use whey from the top of yogurt? I've used it to ferment kimchi before.

I don't think so. Yogurt is fermented with lactic acid producing bacteria, vinegar is acetic acid fermentation.

Correct, this would make lactic acid.... and it would be wierd, youd have to use unfermented wort too.
