Those look dangerous enough!
I must say the last 2 knives I got from Grohmann are hands down awesome. Very versatile, I have a few other knives from them but these 2 are my go to knives.
And they were also discount ones from the blem rack.

Yeah, I have both of those, plus a few others from Grohmann. They are good knives too. A bit softer steel.

Oh, I've got 13 Grohmann of all shapes and sizes, but a person needs some variety.

Ok, so I have a decent chefs knife but it is really wide and food (veg mostly) sticks to it like crazy! So I need a good veg knife that is 'really' good at preventing sticking. Rob, find me one on ebay that is ~$50 and I can sharpen with this

I know the sharpeners are not ideal, but I've had it for 6 months or so and it's works great. Sure I don't have the ultimate in razor sharp.. but I don't need that. I'd much rather have a 'pretty darn sharp' knife all the time vs. a 'super' sharp knife some of the time, until I take the time to sharpen it with all the proper gear.
So.. if I "need" a manual knife sharpener with all of the jap knives, then I guess I need some other type of knife, ha.

It's not that you need a manual knife sharpener, it's just that I've found those things tear off a lot of metal, but maybe it's a bit better than some of the older ones.

I've found the same with those as well. I find a good whetstone does a much nicer job.

Hmm, that knock off is nice.
Though I think you'll find that the model sharpener I got isn't pretty good at not hacking up the knives as long as you use it appropriately (not use the coarse setting ever really). Though I may pull the trigger for $33 on that knock off.
Let's start with a knife. That one you linked looks nice, but I like a good 'rocking motion' when I cut typically.. so maybe a more rounded profile would suit me better? Also, do veggies simply not stick to these knives because of friction (smooth) or because they are really thin.. or.. they do stick?

Unless your knife is 5 mm wide, stuff will stick to it. That nakiri is a standard knife that has been in use since forever. You'll make it work.

Alright, I'm sold! Will be ordering that knife and that sharpener this week (after I read that thread.. there needs to be some sort of webpage you can enter in a forum thread and it'll give you a summary, ha).
