It was definitely a pie making learning experience! First couple were a little charred on the bottom , last 2 were better but there's still room for improvement.
A little crispy on de bottom Looks decent before hitting the grill Bottom is good, top is a little undercooked Ah, Red Duster APA to wash it down!

Interesting setup, you obviously must get a lot of heat reflection off the dome to get the top that well cooked in 3 minutes! So you have a standard ceramic stone and then a metal on top? There's two Primo ceramic "D-plates" on top of the grate then a Primo ceramic pizza stone on top of those, the double layer is for thermal mass. Plates and stone are both about 3/4" thick. Not wide open, no fans. For this cook the grill was running steady @ ~ 540-550 F for one hour. I've been playing around with different setups; grate / stone height, temperatures, hydration on the dough, looking for the magic. Dough is built @ 70% hydration which makes it difficult to handle. It's maybe 1 - 2mm thick, more or less in spots.
So, grab some fire bricks and get on it!!
