Fresh Oregano

So, i kinda forgot that Oregano is a perennial and its growing like wildfire in my herb garden. The patch is probably now about 2ft by 2ft tightly packed with the stocks about 6inches high. Last year i was just using it in pasta sauces but with the mass amount i've got now I'm looking for other uses. Anyone have any good recipes or want some?

You might want to check out some greek recipes—likely quite a few that require a healthy dose of oregano. Nothing beats some roast lamb with lots of garlic and oregano.

I use a shit-ton of it in pizza sauce. 1/2 c olive oil, 8 or 10 cloves of garlic, a little salt and pepper, a couple shots of hot sauce and a load of oregano whipped up in the food processor :cheers2:
