5 gallons of cold brewed coffee on CO2

I'm not sure if this is best filed under bewing or food but food it is.

I'm thinking about cold brewing 5 gallons of coffee and carbonating it in a ball lock keg to have on tap. I've read about the same, just on nitro before.

I figure some sort of BIAB is the way to go. Do any of you coffee peeps have any suggestions?

I've been frothing at the mouth to try something like this since I heard about nitro cold brew!

Not that I know anything, but I'd start with this: https://tonx.org/cold-brew-guide
Maybe use enough course grind for 2.5 gallons as per the above article, steep for 12-14 hours and then add 2.5 gallons of water.
