Never thought about using ramekins for muffin tin / cupcake chicken thighs. That's a really good idea when you don't want to make a dozen at a time.

I put that grinder to use again and made 4 lbs of spicy breakfast sausage with beer and maple sugar, then it was fried bacon, onions and hard boiled eggs, smoked for 3 hrs then glazed with maple syrup. It's insanely delicious!!!

Got some pork back ribs on the grill now with some hickory chips. Nash, I am giving those stuffed tomatoes of yours a try too. How long did you have them on the grill for? 45 min to an hour?

Usually about 45 mins I think, but at a higher temp. Basically just enough to warm them through and they just start to soften a bit, you can tell if you try to pick them up with tongs. If you cook them too long they'll turn to mush.

You're making me hungry again. I just finished a half rack of St. Louis style ribs grilled and a ceasar salad followed by a bakeapple ( cloudberry ) cheesecake.
Well 1/4 of the cheesecake anyway.
Those stuffed tomatos sure do look promising. I may have to try them out sometime on my holidays when I get the chance to grill again.

The tomatoes turned out alright. They tasted awesome but I should have added more cheese, or something else to hold the bacon together..Lesson learned. I will make them again and was thinking maybe mashed potato to hold it together.

Two picnic roasts pricked with cloves ready for an apple/honey brine (recipe below but this is the first time using)
and two 3lb slabs of bacon (forgot to take the pic before putting it in the ziploc bags (recipe also below)
Pork Roast Cure (for about 10LB)
2qt water
2qt apple juice
3/4c honey
3/4c salt
10T Tender Quick
1 head of garlic
palm full of peppercorns
cloves to taste (i likes 'em)
Bacon Cure per lb of meat
1T tender quick
1T brown sugar
1T maple syrup
I added a good bit of fresh ground pepper and probably 6 or 7 cloves of garlic and about 3T of cinnamon to this recipe.

Ribs from the weekend. Did 12 racks on my PA bullet with Apple. Added a bread cooling rack that has legs for the extra grill space. Worked like a charm!
