Half of the rack of non-smoked was rubbed with coriander, cumen, salt, pepper, garlic - the other half was lightly rubbed with my standard pork rub. They were tasty, but I preferred the smoked ones.

That chicken turned out really nice on the grill. Not hard to spot Sobey's ribs, lol. I hit them with two PC sauces. A light coat of the Montego Bay at 1.5 hours, and then two coats of the fig stuff at the end. Was a nice combination.

Trying to smoke some ribs on this biatch. If any of you experienced guys have any input on what I have going on there, let me know. I added about a chimney full of charcoal and a handfull of applewood chips on top of the charcoal. I'm keeping all the charcoal to one side with the ribs, drip/water pan, and top vent all on the other side. How often do you add chips, and how often do you add charcoal (generally)?
