Coca Cola short ribs. I took many of the spices you find in cola and kicked them up a few levels. Slow cooked in Coke and added some heat with the dried chillies.

Thanks man. I certainly will keep the club up to date on developments. I'll have lots of questions as it gets closer. It's so great to have such a helpful brewing community here.

I know it's fall because I made this tonight. Pasta made like risotto, simmering in and absorbing stock, with the starch leeching out to create a light sauce.

Built a giant sausage from scratch tonight. Stout bun, sausage made with bacon and two pork chops with quick pickled red cabbage, onion and corn.

As I've posted elsewhere, life hands you a 4°C in January you fire up that smoker, son.

For tenderness the ribs could have used another hour at 250°F but they were "done" and tasty. Nobody complained anyway. I did cut one rack in half to test whether it mattered to the finished product whether they were cut before or after. Didn't seem to be much of a difference to me.

For smoke I had three or four good chunks of the peach from the group buy along with a few handfuls of mesquite chips. It's a happy combo.

Guests are not heat friendly so went fairly sweet and mild with a brown sugar rub and an apple ancho sauce. Grilled off with the sauce to finish and passed more sauce around the table.
