...I really want to try making Nachos on my Weber now! Any idea how I could accomplish this? I could sacrifice an old pizza pan probably.

The nachos over charcoal are really good so you should get on it :mrgreen:

I used to be a Weber kettle guy, never thought of nachos on it back then but here's a couple things you may want to consider... I do them in the Primo on a THICK pizza stone, about 3/4" although I'm sure a thinner one would likely hold enough heat to do nachos reasonably well. Firebricks would be a lot better though and they are dirt cheap. You need some fairly high heat, I do them around 450F or so in the ceramic. I'm a little doubtful the Weber will get to that especially with the blocked airflow from the stone or bricks. Using natural lump charcoal will give you more heat than briquettes, if that doesn't get hot enough you might need to hook a blower up to the air intake :lol:

For all I know maybe ~ 350F will work okay if you do thinner piles of nachos. Basically you need to build, roast and serve them before the tomatoes, veggies and cheese make the chips go soggy, which can happen pretty easily if not cooked quick enough while waiting for the cheese to melt in the center. Give the stone a good preheat for at least 30 minutes or longer, if you use lump you won't need to adding any smoking wood for flavour, the nachos pick up this amazing light smokey taste without, not sure if briquettes provide the same effect. Oh and I don't use a pizza pan or anything, I build them on parchment paper and use a pizza peel to move them on and off, if you use a pizza pan it should be very thin.

Anyhow, yeah give it a shot and report your findings. Oh and let's see the pics :cheers2:
