yeast question

Post by amartin » Tue Jun 30, 2015 2:39 pm

Hey All,

I started a wyeast 1968 pack on Saturday by smacking it and then directly pitching it into a 1 gallon starter. My plan was that it would be up and running late Sunday, but I should have looked at the date on it, because it was from February and when I got up Sunday it looked like it definitely wouldn't be usable until later. Fortunately my American yeast can usually go from the fridge to high krausen in 6 hours or so because it's awesome, so I still got to brew that day. Anyway, I let it go, and last night it looked done, so I crashed in in the fridge and decanted it this morning. My plan now is to brew with it this weekend, but by then it'll have been sitting dormant for 5 days.

Do you think I need to make another starter for it, or can I pitch it as is? I'm thinking of making something low gravity, under 1.040 anyway, and I can inject it with direct oxygen.

Pitch it, it'll be fine. I wouldn't feed it wort unless it was sitting for over 2 or 3 weeks.
