DMS in small batches?

I'm doing 4.5L batches these days and don't want to spend sitting around for a 90min boil when I brew with Pilsner. Prefer to do 30min mash and 30min boil.

Anyone know if DMS boil off rate has any correlation with wort volume?

I don't know what to tell you other than that modern pils malt doesn't seem as probe to dms - I haven't bothered with 90 minute boils (just my usual 60) and have had no problem.

I've read the brulosophy on DMS. I'm still concerned because this was a single experiment with a single manufacturer. I've heard mixed results and that malt manufacturers can't guarantee lower DMS. But then again this is just hearsay.

I guess I'll just try and see what people think with taste tests! :)

On the brewing network podcast last week the brulosphy crowd urged caution on the DMS test results because many commercial studies have found different results. It you like the brewing network podcasts last weeks episode with brulosphy was one of the better ones this year. They spent the entire episode talking about home brewing which is quite rare.

Yeah this was my understanding as well. If the 30min boil DMS experiment proved true, then likely commercial breweries would adopt this, however I haven't heard of any making the switch below 60min boils.

For 5-10 gallon batches I don't mind a brew day with 90min boils, but for a simple 1 gallon batch in the late evening I'd rather stick to 30min. As mentioned I'll try on my side and do taste testings.

For 4l the effort is minimal. I'd do it and suffer the out come.

I'm with sandy on this one. You can either go short and potentially learn a limit or you can potentially lose an extra 15-30 minutes of your life every brew day just in case you're already at the limit.

The bubbles in your pot don't get smaller at the same rate that the volume of wort gets smaller so you would be more efficient at turning your wort over. Also your surface area to volume ratio would favour blowing more DMS out. Fermentation would have the exact same effect with being more efficient at scrubbing out DMS. On the other side of things the conversion of SMM into DMS wouldn't be affected by the size of your batch. I would guess the fermentation/boil efficiency would win out and you would be fine with your shorter boil.
