Gluten Free brewing
Has anyone here done any gluten free brewing? My wife would like me to make some stout for her. I've found a recipe that doesn't have too many parts to it, some of the recipes were quite involved. I found a site with recipes which was handy glutenfreehomebrewing.org, but was wondering if anyone has had any success with gluten free brewing?

I've had a lot of success with brewing gluten free. There are a couple of threads on here of people asking the same question. They might be worth reading through because there are lots of little nuggets of gold spread all around. My process involves brewing a normal beer and then adding Clarity Ferm, which is an enzyme that digests the gluten proteins. Since the enzyme works so well I would advice you not to malt your own ingredients unless you want to experiment with malting.

My wife just got diagnosed with celiacs. My next batch will be brewed with Clarity ferm. There is a portland brewery called omission http://omissionbeer.com/" onclick="window.open(this.href);return false; that brews with the product and their beers are fantastic.

As does Stone with their "Delicious IPA", Estrella Damm Daura, a bunch of Brunehaut beets, and more. ClarityFerm is great.
HOWEVER, it only addresses the gluten part - anyone who may have an allergy or reaction to wheat or barley itself (in addition to or instead of gluten), this will not help them.
