Old Peculiar beer kit question
I was wondering if some could tell what I should have done. Purchased an old peculiar Beer kit followed instructions ant topped it up to 23 liters. Transfered to the carboy after about 3 days minus the sludge. I was surprised to see that I had to leave about 4 liters of sludge behind. So right now I am short a fair bit of liquid. My question is do I leave this or should I have topped it up with plain water. So next time do I start of with say 26 liters on order to anticipate the short fall? As you can see I am very green at making beer.

Top up prior to pitching yeast and leave it. What racks to the carboy is what you have. Water that is not boiled contains allot of air and while probably not an issue on day 3 it will dilute your gravity. I'd just leave it. I don't image you would have allot of hops with this recipe and Windsor is probably the yeast you used so I'm surprised you have that much loss. Don't worry about it. I'd leave it in primary a little longer next time. No rush and it lets things clean up.

Welcome to the forum! I'm not familiar with the particular kit you made, but it sounds like a steeping grain / extract brew? Three days in the primary is probably a bit short for a primary fermentation. What you will find is that there's a lot of people who don't do a secondary fermentation. Personally, I don't do a secondary fermentation, opting to stay in my primary fermentation vessel for 2 or 3 weeks before racking to the keg or bottling.
I wouldn't top up the secondary at this point - live with the 19 or so litres and enjoy. Oh, and stick with top up to 23 litres.

Thanks for the replies. The kit I had purchased is a Best Case beer kit. The instructions are to transfer as soon as the bubbles collapse and not longer than 5 days in the primary fermenter.

I also just do a primary ferment only. I've brewed a few best case kits back in the day as well. I did this as well, but found the secondary unnecessary. Also at day 3 everything hasn't settled out which is why your seeing so much loss. I typically ferment for 7-10 days. Then carefully move to its final resting spot and let it sit a few hours before racking to the keg.

I have a similar issue as the OP. I am brewing a Best Case Black IPA. This is my first stab at brewing. I am day two into my primary. Started looking at the krausen definitely fallen some but it seems like everyone is suggesting leave it in the primary for a least a week.
As it is my first stab at brewing I am a little hesitant to deviate from the instructions. Should I?
