Fermentation Fridge Thermostat

I bought a fridge months ago for the sole purpose of a fermentation fridge but the disadvantage over a deep freeze is that the internal thermostat will not let the fridge go below 10 deg C for cold crashing or lagering. I have an Inkbird temperature controller that will turn on the compressor but I was wondering if anyone has any experience bypassing the internal thermostat to allow colder temperatures. I appreciate any help.

Hmmm... That doesn't sounds right. 10 C is well above food safe temps! Fridges should hang out in the 0-4 C range, so yours should have no problem getting there.

Maybe your Inkbird is miscalibrated and reading artificially high?

Silly question, but have you set the fridge temp to its lowest setting (there is normally a dial)?

Your fridge might also be broken.

The fridge dial is set to the lowest setting so the temp controller might be miscalibrated.
