Harvesting yeast from peaches

Post by Broob » Tue Aug 22, 2017 11:06 am

I have a small peach tree in my backyard that will typically yield about 30-40 peaches each year. I've read that peaches are a source for wild yeast so I thought I would try my hand at harvesting.

I made a 1L starter at about 1.035 and threw in 6 peaches and teaspoon of yeast nutrient. By the next morning you could see signs of active fermentation. You could definitely get a brett smell from the beer. Nothing offensive yet. It's been about 36 hours and I removed the peaches this morning. The plan is to let is finish, cold crash and save what I get.

I'll have an unsuspecting friend try the beer and if he doesn't get sick then I know we're in business. It may not yield anything I can use but it's an example of me doing it because I can.

Smart and very cool. I like that you can keep stepping the yeast if needed and it's from peaches grown on your own property. :cheers2:
