'Clone' is such a dirty word. I prefer 'improve'.

I brewed an amber rye ale last night. Going to bottle my chocolate milk stout this evening.

Re: What's everyone making this weekend?
Brewed up an Imperial IPA (Maharaja recipe from CYBI) and Belgian Tripel with Chalmers and Justin on Saturday, then brewed a Pilsner, that I didn't get to last week, on Sunday.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

The Tripel was the first time I had done a starter, and it took off like gangbusters. Also the first time using a blowoff tube on my carboy, and I'm glad I did! Lots of yeast action going on, looking forward to tasting this one in a month. Just need to get rid of the backlog in the kegerator...

Re: What's everyone making this weekend?
I did my first starter with some washed Wyeast 1007 for a Weissebier and have been making one for every batch ever since. Gotta love seeing fermentation take off like a rocket so quickly after pitching.

Made a Lambic yesterday. Turbid mash wasn't as bad as I was expecting.

Re: What's everyone making this weekend?
Geez that's weird, is that to pasteurize? I might have to start doing that to keep my beers from spoiling, I'll give my smoked porter a quick boil tomorrow then get it back on tap as quick as I canmr x wrote:Boiling my smoked porter right now.

No, run the beer through an inline microwave before the taps.

Re: What's everyone making this weekend?
Put a starter (of Wyeast 1332) on yesterday morning for this weekend's brew (hopefully Friday afternoon). Needed to put it on early so that I can step it up before pitching. Brewing my first > 1.060 beer (IIPA), so not wanting to take any chances.

Hey Jeff, curious to see a recipe for your IIPA (I'm extract for the foreseeable future too so curious to see another extract guy who likes his strong hoppy beer!)

Re: What's everyone making this weekend?
You betcha Tim. This is a recipe I put together myself so not sure how it'll turn out. BeerAlchemy tells me it'll be fine though.
Dirty Rotten Imperial IPA
Fermentables
Wyeast 1332 Northwest Ale
2.5 gallon boil for 60 min.
Like I said, this one isn't proven yet, so take it with a grain of salt, 'cause I'm no pro!

Re: What's everyone making this weekend?
This past Monday I made a winter warmer to put away until fall. Because the temperature in the room was in the low 60's and I'm using an English yeast, I was afraid of it being too cold to ferment. So, I only cooled it to around 70º and put it in a garbage bag full of insulation (my outdoor lagering solution in the winter), hoping that if I could kick start it high enough and hold the heat in it would make it through. Oh boy, did it ever. The next night I opened the bucket to see how it was doing, and the air in the headspace was warm. It was 80º and had already fermented to 1.028 (from 1.068). I'll probably have to rack it tonight, and I'm a little afraid to sample it.
So, yeah. Let that be a lesson to all of you.

Re: What's everyone making this weekend?
Hopefully you'll be ok where it's a winter warmer—the additional esters and whatnot that will come from the high temps may be be a nice addition.

Halfway through the boil on my Dirty Rotten IIPA. I really need to invest in a bigger pot and propane burner. Stovetop/indoor boiling on hot days like this is for the birds.

I appreciate the offer. I might take you up on that down the road. Wasn't too bad today once I fired open a bunch of windows, turned on the range hood and cranked up the Venmar. Hellooooo electricity bill!akr71 wrote:Shitty, I would have gladly loaned you my 30 qt pot and a burner.
