Just finishing up the boil now. Decided to let it sit overnight.

Yeah, every one of those Lindemans I've tried was back sweetened, and not really appealing to me.

I found a pound of Simcoe in the back of the freezer so put together an all Simcoe IPA yesterday.

Off Kilter (an 80/- Scotch Ale) and if time permits a variation of Tony's Pale Ale that took the bronze at GCHC.

If I can find the time, I'm thinking about brewing a variation of the Cascadian dark ale (Grizzly) that I brewed in the spring. Going to call this one Kodiak. Changing up the hops, yeast (swapping in 1332 for 1318), and throwing in some wheat malt this time around.

No changes, it's not quite a clone but we all liked it, glad you enjoy it.

Brewing a Southern Tier Hop Sun clone tonight. It's a bit too thunder and lighteningy for my liking though.
Good thing my stir spoon is plastic. Although, standing next to a SS kettle outside with lightening all around me is not that comforting. It'd better be a good brew.
