Chalmers and I are brewing up a wake and bake oatmeal stout clone tonight

It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Well since by brewery is still not done, and I AM ALL OUT OF HOMEBREW (there is no crying emoticon?), I was forced to put up a Festa Brew pale ale
. I got 2oz of cascade hops to dry hop with after the bulk of the fermentation is done. On the bright side I finished my fermentation chamber so at least the temperature is controlled.

With the kids back in school
it's time to get back to brewing.
Brewed a Ginger Witbier yesterday and it's fermenting nicely this morning. I'm using starters now and it's great to see the wort take-off so quickly. (no more long lag times!)

LD and I are brewing a Fresh Hop Pale Ale tonight, and then a Pumpkin Ale and either Hopuard clone or Nut Brown tomorrow at Broadholme. Need to restock after a long weekend if drinking and diving (scuba) in Cape Breton.

Brewing something on Monday night with the Gambrinus ESB malt from the last order. I guess it will be some kind of bitterish thing...

Since I couldn't make it down for Hoptoberfest, I figured a brew day was the next best thing. Closing in on the last 15 minutes of the boil for a mostly Cascade IPA.
