Off topic, but you know fermentation is going strong when your blowoff tube is keeping time with Keggermeister's avatar ...

is that big tide?
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

If it is, I'm on a boat there now! No, seriously, I'm on a boat. Will it be ready around 7?

canuck, if you get this, and feel like meeting for a pint tonight (Sunday), fire me an email at my address (on the right, under my name). Didn't realize, until I just looked it up now, that Quispamsis is very close to SJ.
Is Big Tide open today? If not, I was going to hit up the SJAH.

Unfortunately, it's closed on Sundays. It's open tomorrow morning at 11:00am though. A close friend of mine owns the SJAH, it's a great place and has the most beers on tap in NB. Awesome food too!

How long are you in Saint John?

Thanks for the confirmation. Sorry if I asked the same questions to you via email just now. :)

SJAH it is, then! Never been disappointed with the beer, food or service there.

Looks like we won't hook up tonight, but Wednesday at lunch is a strong possible.

I'm picking up my American Ale 1272 this weekend, so I'm going to brew an American porter.

Well I picked up a recipe from.......
23liters
3kg pils
1kg munic
500g acid
100g choc
hops are n.brewer bittering and hallerteau later in the boil. What I am concerned about is the acid, didn't do much reserch until today and I have found out it is more for adjusting ph. 500g may not do much but I can't change recipe at this point. What do yas think? Alt is what i'm aiming for, but sour is not.
cheers
I will also ckeck Charlottetown water supply water profile
Drinking: Red Hook clone
Waiting on: Fruit beer

11% is a fair bit of acidulated malt. I believe you will notice that, but the effect...could be good, could be a bit off. Hard to say.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Hey spuds, let me know what your efficiency ends up being. Hogie and I found that adding gypsum to the mash water increased our efficiency by 5%+. As far as I figure, it is probably due to the increased buffering capacity to keep the pH low during the mash, and the increased calcium and sulfur doesn't hurt. With Ch'town water running 7.9-8.0 I would be curious to know how the acidulated works out. I have to bring my pH meter down from the lab to try to track during the mash someday.

Bringing a new brewer into the fold. Convinced my sister-in-law to get a starter kit and we'll making a Festabrew Wheat Ale this afternoon. I have a feeling she's going to come up with some amazing recipes once she gets to the partial mash stage.

Brewed a 7 hectolitre batch of Cream Ale today at Big Tide. My own brew day will be one day early next week and will be a Sierra Nevada Clone.

I liked the Stone "More brown than black IPA" that I am going to brew up some sort of Brown IPA. I'll use my base brown recipe, hop it up with some centennial, citra, amarillo at ~80-90 IBU, dry hop it as well, and see what I end up with.

I am also going with a Stone clone, gonna try and brew up some Arrogant Bastard tomorrow with Sanitarium. :headbang:

"Intoxication so bitter sweet" ESB, and an as-yet-unnamed English Mild with that new East Coast yeast.

Both brew-in-a-bag with the brand new brew bag that Marta made me last week.
Currently on tap: Whiter Shade of Pale!
In keg: .
In Primary: Nothing

The newest info seems to lean toward C150 instead of the Special B that previous clone attempts suggested.

I'm thinking about throwing my hat in on the Arrogant Bastard here soon.

Hmmm, well I'm committed to my recipe now. I'll let you know how it turns out.
