I was thinking more of all the sugar additions done during primary fermentation.

And sweet jesus, 14 hours! That's dedication right there. My last RIS brew day seemed to be somewhat the same. Lasted about 7 or 8 hours, but it was mostly due to the fact that myself and my buddy that was helping were both extremely hung over.

I'm brewing up 42L of Witbier now. One carboy is going to get 3lbs rhubarb in the secondary and the other one is going to get a cocktail of spices (peppercorn, etc).

Just FYI, this came out very light... needs more hops. It went from 1.050 to 1.012. The first time I made it I did the Nash hop burst steeping dry hop method, this time I used less hops (only 10 grams vs at least 14, maybe more) for the dry hop and just tossed them into the primary after 2 weeks. All and all it might make a good lawn mower beer and tastes good with a drop of lime. Also, I guess I have to learn my new brew rig and this was the first batch on it.

Two spruce beers tonight. One with Nottingham and one with Safale US-05. Similar to what I made last year which is posted in here:

Using a little less spruce tips as I had a later harvest as I expect stronger spruce flavour.

I'll be brewing a 700 litre batch of a west coast style APA on Saturday at the local microbrewery. This will be the first time brewing my own recipe there so I'm pretty excited about it.

I haven't brewed too much at home in the last little bit as all of my kegs are full and I've still got two in fermenters that need to be kegged soon. I plan on making Jeff's Bees Knees APA recipe sometime next week though.

Haha awesome! But it won't be even close to Dogfish 120. Basically we didn't hit our efficiency and decided to just make it an IPA. Corn sugar is all weighed out and ready to go for when we do actually brew it! On a day when not so hung over...

I reset the gap in my grinder, efficiency up to 82.7% and my post boil OG 1.058!! Fermenting away like crazy now, hope to get it down to 1.009-.008

I got my west coast pale ale made today at Big Tide. I ended up with 710 litres with an OG of 1.054. It's going to be for sale at the brew pub and will be called Hammond River Pale Ale. If anyone is in the neighbourhood once it's on tap I'd love to get some feedback on it.

Three day weekend means three brews. (Need to be done as they are all for gifts and this will be the last weekend for brewing to have them done when needed.

79.37% American 2-Row
8.82% Munich I
6.17% Crystal 60
2.65% Acidulated Malt
2.12% Amber Malt
0.88% Chocolate

0.3 g/l Columbus (11.1% Alpha) @ 60 Minutes (Boil)
0.9 g/l Tettnanger (4% Alpha) @ 30 Minutes (Boil)

Single step Infusion at 66°C for 90 Minutes. Boil for 60 Minutes

Fermented at 20°c with american ale II

I am currently brewing Jeff's Bee's Knees Pale Ale recipe. It's the first time that I've brewed at home in little while.......it's nice to be back at it.
