Different smell.

Post by maglorski » Tue Aug 16, 2016 9:28 am

I'm doing what I'm hoping is a pineapple pale beer for our next swap.

It was suggested I use Saflager S-23 to get the fruity esters. This is my first time using this yeast too...

I pitched Sunday afternoon past and when I went to check it yesterday afternoon in the basement (which is about 19 degrees C) I noticed not the greatest smells in the room. Palmer says that rotten egg smells may be produced with some lager yeast strains...which is what I would liken the odour too. However, since I'm not lagering I have a concern that I've got a bacteria infection and the batch might be no good at this point.

Comments?

Thx.

M.

S-23 will defiantly give some sulfur smells at a higher temperature ferment, however it will dissipate with time.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Give it some time. 19 is fairly warm and that is likely what's causing the off smell. See if the yeast cleans up after itself in a week or two

What they said. Some yeast farts actually smell like farts. It will be fine.
