Hey All,

After a long break from brewing(~5 years) I'm thinking about diving back into brewing. I just got engaged and home grown is going to be the theme for the wedding, so home brew is a good fit.

Last time around I was trying to build a small electric all grain brewing setup on a tight budget in an apartment. These days I have access to a large garage where I can use propane burners and go big. I'm kinda leaning towards a classic 3 vessel HERMS configuration using 15 or 19 gallon kettles from Everwood. I'd like to be able to do something like a 15gallon batch of light beer and 10 gallon of higher gravity beers.

I'm currently debating if I can get away with one pump. Maybe build the stand as a two tier to allow for fly sparging. I'm trying to not go too cheap this time around but at the same time I don't want to spend any more than I need to. I'd like to keep it somewhat easy to use and clean.

I sold off most of my gear so I'm starting out from zero again. I need kegs, co2 tank, co2 regulator, taps, lines, grain mill, counter flow chiller, propane burners and regulators, kettles, false bottom, pump, herms coil, lines, valves, fittings, thermometers... I think that is most of the major items. I still have most of my fermentation gear sitting in storage so I'm not totally a zero.

Is there another configuration I should be considering at this scale?

Its been a while since I've read up on brewing. So my knowledge is a bit rusty. I find I'm having trouble finding good refresher material that isn't just the basics. Anyone got any good websites or youtube videos that are worth checking out?
