Brewed up a Brut IPA today, as usual thanks to Liverdance for the hookup on the yeast/enzyme (Fermentia HA-18)

Thanks for the info. I see I posted about NG getting the Mangrove Jack's in November 2017. It's most likely that's when I bought it, so perhaps it's a little old? It may also be more sensitive to lower temps than US-05. Oh well, I'm guessing I'll still get beer, it might just taste a little longer ;)

Curious to hear how this one turns out as I've got some of the HA-18 as well. I still haven't had a Brut IPA that doesn't have an enzyme character to it, but I don't believe any of them used the premixed yeast+enzyme. I do know that Fermentis' marketing bumf about HA-18 was more geared towards a quick turnaround and higher attenuation on bigger beers, so there's always that use for it if the Brut IPA thing doesn't work out.

Ya it’s my first Brut IPA, and Liverdance has a bunch of HA-18 so I bummed some off him. Was thinking of maybe doing a Barleywine with it depending on how the attenuation works out for this IPA.

Whole coriander vs ground coriander? Going to brew a Wit Beer today. Has anyone used ground coriander from a spice jar? How much do I put in for a 5 gallon batch? The recipe calls for a ounce I’m guessing that’s whole coriander? I’ve googled around and some recipes say 5grams. Anyone have any experience with coriander?

I would use whole coriander (and lightly crush it)... it'll taste fresher. I worry that with ground, possibly old, coriander that you would get more of a ham/celery flavour than the herbal spice note that you would want. You can pick up whole coriander cheaply at bulk barn. Just my 2 cents.

Thanks for your 2c. I didn’t have your tip before I brewed. I used ground coriander from the spice jar. 5 grams worth. I can taste a subtle coriander flavour in the hydrometer sample. We will see after it’s fermented.

I lightly crush whole coriander as well. If you can get Indian coriander go for that, super fruity and less of the "hot dog" flavour we get in the Mexican coriander.
