Yeah, I figured I haven't been drinking much anyway, so why not brew some sours and let them age...I'm thinking I may brew mostly sours going forward, since most other styles are readily available at breweries and liquor stores in HRM now.

Now to build an aging room for all of the carboys

Brewed a pale ale last night...test driving some hops i've never used before...belma and huell melon...and tossed some azacca in for good measure. Split the batch...half got wlp644 and the other got the dregs from a beer I built up that had brett in it. Not sure what to expect out of this one.
Pulled a sample of the dregs half last night and it was tasty! Went from 1.053 to 1.004 in 6 days! The dregs were from a Funklabs Uncommon Element Brett Pale ale with brett Drie. I contacted Nickelbrook to see if they could share any information so I could try to figure out just how much brett I could expect...but they weren't very helpful and wouldn't share any info with me... :moon:

I kegged it on a combined 6 oz of Belma, Huell Melon and Citra and will dry hop til Monday or Tuesday and then carb. I'll have it ready for the Truro meeting next Thursday. I'm pretty excited about this one!

Finally got around to brewing my Flanders Red. No one had any Roeselare Yeast, so I decided to use Yeast Bay Melange.

Now to work on getting a Solera built to age it after primary fermentation!

Just started a second batch of All Grain Best Case Beer Northern Lights Pilsner. Going to try this time with boiled tap water instead of spring water. I am hoping to run a third batch and have it completed before the first of December ( Christmas stockpile) however finding bottles has become a big hassle so I am switching from pop tops to caps
