I run into similar issues, I get decent mash efficiency but the boil off is quite low.

I've been wanting to try that as well! From what I can gather DMS is not the issue it used to be with new and consistent malting methods. Same with conversion in a short mash. Might be problematic with some traditional floor malts.

Anyone brew a champagne/ brut IPA yet? I love the description of the style so I special ordered some enzymes to give it a shot.

From what I’ve read it’s super dry (potentially 1.000) and effervescent with lots of hop presence. North is making one but I haven’t had the chance to try it yet.

First brew day on my new 3 vessel 10 gallon keggle system today. Splitting the batch into half kettle sour and half hoppy Saison with cascade and ekuanot.

I know at least one homebrewer who has made a batch of this but I'll let him speak up if he so desires. Between that beer and North's Alloy I'm comfortable suggesting that getting it right is going to take more than adding enzyme to dry a beer right out.

I learned at the CBAs that Fermentis has a new product out that might well drive this style of beer, although it was originally developed to provide quicker fermentation times on clean-fermented big beers like RIS and Barleywine. It's called HA-18 and it's a pre-mix of enzymes and yeast. The gentlemen at the Fermentis booth told us they're hoping to have it available in homebrew-size sachets at some point but right now they're struggling a little bit with getting the yeast and enzyme mixture homogenous enough at that scale so it's only available in bricks. I have some that I'm going to give a try probably this fall.

I'm interested to try the style for sure. Hoping North has some left the next time I'm in the city.

I'm going to use White Labs Ultra Ferm which is available in homebrew scale vials from OBK and Beer Grains. NG was able to special order it for me so I'm just waiting on it to come in and I'll be giving this a shot.

British pale ale. 5.4kg Maris otter. Repitched wyeast 1469. US Golding for flavour and aroma additions. Came out to 1.053 so maybe a little big by British standards, but should be good and drinkable in time for my family vacation.

I brewed 12 gal of a NE Pale ale last night using Omega yeast's Voss Kveik strain. All flameout/whirlpool hops and in the fermenter before pitching the yeast. Underpitched @ 30C and have it sitting at 37C and its going nuts! Dry hopping Thursday. Hoping to go grain to glass in 7 days.

I fell down a rabbit hole reading about these Kveik strains...they are insane! They go against everything you read about normal homebrew practice!

Great yeast strain! I've used the YB Voss Kveik for the last 4 NE Pale Ale/IPAs and its been a beast! First two times I ran it in the mid 30s (celsius) and it finished in maybe 4-5 days. I've done the last few NE Pale Ales in the low 20s to see how it compares in terms of aroma and attenuation. Were you underpitching to boost the esters, similar to a hefe?

Nope, I got my vial of the Yeast Bay Sigmund Voss Kveik from Everwood, its a little more expensive than the regular WhiteLabs or Wyeast. Looks like Everwood doesn't have in stock now.
I have some Kveik yeast that I overbuild (around 100bill cells) for my starters. I can build it back up again and give you some if you like. I see you are in Sydney, but if you are ever in the HRM let me know.

Yeah everything I found on Milk the Funk said to underpitch to stress the yeast...which they say brings out all the esters.

One of the threads I saw said to take it even higher than 37C (which is what Omega shows as the high range). I think I will bump the temp to 39 when I get home at lunch and let it ride.

Nothing yet. I like the programmability of the unit, multi step mashes are much easier. Also like the option of adding a still attachment.

Nope no issues on mine either, had it since January. Brewed around 15-20 batches now. You may want to upgrade to another chilling method, mine worked find most of the winter/spring but now that the ground water has warmed up it takes a lot longer.

Otherwise I made a Coconut ShyPA last week that I am going to be dry hopping today with Mosaic and more toasted coconut.
