Re: What's everyone brewing?
No problem. I don't know how to share through Beersmith but here's the recipe:
80% 2 row
10% cara-pils/ dextrine
10% crystal 30 (down from 60 this year, might go lighter or eliminate it next year)
2oz glacier at 60, .5 at 30 and .5 at 1 min.
2oz minced fresh ginger at 10 minutes
1 cup freshly squeezed lemon juice at 10 (more than this and I find some astringency comes through... like it did this year)
2oz rum soaked ginger at 1 minute
Target og is 1048
US-O5
I have played with the amount of ginger each time. I've added almost double the amount listed above and it was great. Depends on how much you like ginger I guess. I've added lemon peel as well but didn't this year and the lemon bitterness is still a bit sharp. If memory serves it gets better the longer it's in the keg but it doesn't usually last that long. I've changed the hops from time to time. Not going for much hop profile just the bitterness. This one is calculated around 38 IBU on Beersmith but I think I'll dial that back a bit next year. It's been a good drinker for us! Let me know if you give it a shot and if you change anything! Cheers!

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Just finished brewing a Westvletern blonde clone. I'm going to try top cropping yeast to use in a Westy 12 clone. Nice weather to brew!

I kegged my first Bohemian Pilsner last week, I'm really liking it. Here's the recipe I used, was yours very different?

Re: What's everyone brewing?
Not really. I used Hallertauer because that is what I have on hand. I also used Carahell malt instead of carapils malt because, again, that is what I had on hand. My yeast was WLP833.

Brewed an IPA with Wyeast 2112 Cali Common yeast on the weekend. Hopped it with Citra and Enigma, should be interesting

Re: What's everyone brewing?
Brewing up a Westvleteren 12 clone tonight. I'm using top cropped yeast from my Westy blonde from last week to see if I can get the attenuation it needs to go from 1.091 to 1.012. First time top cropping, so fingers are firmly crossed.

Re: What's everyone brewing?
You’ll be fine. With enough sugar and that top cropped yeast there’s nothing stopping it. I went so far as to recover the blow off yeast when I did mine.John G wrote:Brewing up a Westvleteren 12 clone tonight. Re: What's everyone brewing?
I've been a bit busy. Brewed a heavily tweaked version of a previous smoked porter a few weeks ago and I'll thrilled with the results.
My friend really likes Lancaster Bomber. I found a single clone recipe that is completely wrong. Marston lists the ingredients on their site, so I took that as a very loose start. I built something that will be close in colour, but I don't know the yeast and Everwood didn't have all the hop varieties, so I ultimately just ad-libbed the whole thing. It'll be a British bitter, but it won't be anything like Lancaster.
