Speaking of which, does anybody know how much dregs to add to a Brett saison? Is there any upper limit? It seems like there probably is.

If you’re using the recipe I posted you don’t need a tonne - the beer was already fermented pretty dry by the saison yeast. I always add the dregs of about three or four bottles. And if nothing happens I keep some expired vials of White Labs brett around :)

Any amount should be fine, pitch rates for brett as a secondary ferment are pretty irrelevant for the most part.

I haven't brewed in forever. Finally got some stuff and pulled the trigger. Pretty basic blonde, but rather than my usual bittering only hops in the 20-25 IBU range, I'm gonna hop the bejeezeus out of this one. 40-45 IBUs and lots of dry hopping to come.

Just kegged a NZ Pils the other day. Brewed a Rye IPA with some yeast from 2 Crows yesterday, and planning an ESB once the ferm chamber is free again
On tap: Hopped Mead, ESB, Schwazbier
Coming up: Altbier
Fermenting: Maibock
Planned: NEIPA, NZ Pils, Oyster Stout
