Just brewed up a small batch Belgian Ale yesterday in my 1 gallon fermenter. Efficiency was a little low so there was much less than a gallon in there when I pitched a full pack of Mangrove Jack's Belgian Wit Yeast. I'm now realizing that I immensely overpitched since that pack would be sufficient for a 5 gallon brew. Anything I should be worried about? How will that affect the taste?

You should be fine. At most it should only give you restrained yeast flavours.
