Home Grown Apples for Cider. Which Variety?

I want to plant an apple tree or two on my property. I'd like to select one or two varieties that are well suited to home growing, cider making, apple eating, and/or pie making, applesauce making.
Any thoughts, stories, or personal experiences very welcome!

The best single-varietal cider apples aren’t typically thought of as good eating apples (not unlike wine grapes not making very good table grapes), but there are some good dual purpose apples out there, most recognizable being the Golden Russet I’d think. Hardy trees, good producers, high sugar and they keep well too. You’ll need a pollinator though, so check out some pollinator lists and see what peaks your interest.
