California lager + Czech pilsner?

I have some harvested california lager yeast and also a festa brew czech pilsner.

Was hoping to use this yeast instead of the dry. Thoughts?

I think that would work fine.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

il probably split the 23L batch into two and ferment dry one one and cali in the other.

california probably at 15 C

I'd try for 10-12 on the s-23. I used it before at the higher end, and it was bananas....

I have two Festa Czech Pils going now in my lager fermenting fridge at 48f using W34/70 yeast.

I just put my steam beer in the secondary. According to WYeast, the rule for Cal lager is to do between 58-68 for at least two weeks. I did 60 F (15 C) for 3 weeks (the best that I could with a basin of water and 2L bottles full of ice) and the yeast character in the beer (though young) is really nice. Very soft with some fruitiness up front and a clean finish. It didn't cake well, though and the beer is pretty messy looking at this point.
