Overnight mash?

Post by jtmwhyte » Sun Apr 14, 2013 12:16 pm

Just floating the idea of doing an overnight mash on Thursday night. The wife is out for two nights, the little man it's at daycare Friday, but I don't want to spend a full brew day as I'm fixing our house up to put on the market next week and the wife would not be impressed to find the new flooring not installed and a new batch of beer made.

Has anyone done a long mash like this? I'm thinking mash in between 10-11 pm Thursday night and boil around 7:00 am.
It's a blonde ale so dryness won't be a huge issue.

I prefer to mash and run off into the kettle, warm it up to boiling point, cover, and let it sit overnight.

I've done and over night mash not too long ago. Lost 7 degrees in 11hrs. I used tinfoil over the top of the mash and wrapped the tun in a sleeping bag.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I'd like to start doing this as well. Except start in the morning before I go to work. Sometimes I'll come home and do the mash and go back to work.

Yeah definitely a time saver. Don't need to plan 5 hour brew days anymore

Yeah, a quick Google search brought me to links from HBT. Their community didn't recommend it, so I figured it was okay to do.

Yeah I mean there could be issues with too much lactic being produced - I've let my mashed grains sit warm in the run overnight, and they can start to smell pretty sour (though that is usually closer to 24 hours, and at slightly cooler temperatures, since the wort is already drained)
planning: beer for my cousin's wedding
Fermenting: black ipa
Conditioning:
Kegged: barrel barleywine from 2014 - i think i still have this somewhere

I have mashed the evening before but I just put the runoff in a sanitized primary fermenter and snap the cover closed on it. I once got called in to work on a brew day so I ran the mash off into the fermeter and sealed it. I didn't get back until two days later. I thought I would find it ruined but it still looked as smelled OK so I poured it in the kettle. It turned out OK. Not recommended, but I guess you can get away with it.

Yeah, for the record mine was 8-10 hrs in the MT cooler with my full BIAB volume and it never got down to that sour mash temp.

Don Osborn mentions in a couple of his videos that he'll mash, run off, and let it sit in the kettle overnight and finally boil in the morning. Going to try that approach.

I took the plunge and mashed overnight last night. Lost 8 degrees in 8 hours and hit 84% Efficiency which is huge on my system. Provided things work out well with the fermentation I may do this with more beers that I want to dry out.

I'm thinking of doing this tonight with Hammer of Thom IPA. I'd mash in around 154 and run the mash about 6-7 hours with a mash out in the morning. I did this several times (Most successfully with 10 Gallon batch of Centennial Blonde Ale). It's a huge time saver.

I did it with my last IIPA, turned out great. Lost about 8 degrees overnight. Brew it up :cheers2:

Just Mashed in :rockin:

As an aside, Melanoiden smells AWESOME when being crushed! I've not brewed with it yet, but damn.

Melanoiden is awesome! Is this the IPA with 7% and the rest 2row? If so that's an awesome combo. Check out my posted comfortable numb recipe on the board, very similar :spilly:

Yes, it is the 93/7 split with Canada Malting Sup. Pale. I actually stole the grain bill from your Comfortably Numb, so no surprise there. I was hoping for something with a malty backbone without the sweetness of a lot of commercial IPAs. I love me some hops.

I'm also rampaging on whirlpool hops. I've got 4 oz. of High Alpha at flameout and I'm gonna steep and stir for 20 min before cooling.

Awesome, you won't be disapointed in the backbone of this beer.Forget thinking high alpha for whirlpool and start thinking high cohumulone....http://www.mrmalty.com/late_hopping.php" onclick="window.open(this.href);return false;

no need, for some reason i was thinking bittering instead of flavor and aroma. Too many homebrews :spilly:

OK, I'm going to rehash this thread. I have the rare opportunity to brew this weekend as the wife and kid are gone (first time ever!). So I'm going to brew the shit out of this weekend and I want to maximize my time and I'm considering overnight mashes.

Trevor - you still doing this? how did they turn out in the end?

For everyone else - have you done this yet? Any tricks/tips/advice/thoughts? Any styles you wouldn't mash overnight?

I may start tonight if the gods be with me.

Tried it lots of times. Didn't like the results and stopped doing it.
