Whoops...
My first all grain (in progress) is going ok, but I had no idea that I was using a US gallon recipe and now have at least 2 extra gallons of water that I'm trying to boil off before before adding hops. Anyone ever successfully boiled off 2 gal of water? Currently 45 mins in and planning to go two hours before adding hops! Any warnings, encouragements or other sound council? It's a Belgian saison... If all goes well.

You're good. [SMILING FACE WITH SMILING EYES]
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

That's pretty much exactly what happened to my second brew. Your instincts regarding boiling off before adding hops were good. For many styles you're very likely improving the beer, especially pales, IPAs and ambers (although you may drive the color of a pale to the point of being "out of style").

The conversion worked out great. In 2 hours I think we boiled off about 2.5 to 3 US gallons. Thanks for the confirmations!
