Yeast that ferments well in darker wort - WTF?
I keep seeing wyeast strains that claim to work well in darker worts? Why?
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

Personally I don't use yeasts that are afraid of the dark.

They must be referring to the flavour profile of the yeast strain, some are soft and round, others more acidic and sharp, some accentuate hops more, some the malt more etc...mr x wrote:I keep seeing wyeast strains that claim to work well in darker worts? Why?
