Imperial Pilsner recipies?
Has anyone here made any decent imperial pilsner recipies? Looking to brew one of these in the near future. Something in the 8-10% range.
On Tap:

Re: Imperial Pilsner recipies?
I haven't made it myself, but the Imperial Pilsner recipe from Sam Caligione's Extreme Brewing has been on my "to brew" list for a while. Mind you it's an extract recipe. If you're interested, I can probably post it here.

Re: Imperial Pilsner recipies?
If you like the Picaroons Feels good imperial pils, the brewer posts his brewlog which contains all the ingredients, just no the percentages.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Yeah, that's actually not been a bad beer the 3 or 4 times I've tried it.

Forgot to mention that I did a protein rest at 135 degrees for 30 min then slowly stepped (over 40 min) the temp up to 150 degrees for a 45min rest.JohnnyMac wrote:----------------------------

Not quite, lol. I think I may brew this myself come winter, but I'm cutting the carapils down to to around 5%.

Re: Imperial Pilsner recipies?
Time to resurrect this thread. I need to do something with my lager yeast while the temperature's still good. I think this may be a good idea...

Re: Imperial Pilsner recipies?
I think I'll drop in 5-10% corn, and not sure about the hops yet. Something smooth for bittering, and then load up with Saaz/Hallertau from 30 minutes - flameout...maybe...

Re: Imperial Pilsner recipies?
Just having my first Propeller Imperial Pilsner. I like mine better. Too much dark malt in Propeller for me. Not bad, just was expecting a pilsner malt profile.

Re: Imperial Pilsner recipies?
Is that a new beer for them? I think I've seen/tried the pilsner before, just not an Imperial. When the cold weather comes back, I really want to try doing a popcorn pilsner - maybe make it Imperial as well.

That would make sense. Someone told me once the Picaroon's version is actually an ale, not sure if that's true. They had it 2 years ago at Sappyfest and I wasn't the biggest fan.
